It also sounds to me like maybe your AKG headphones could have some extreme EQ going on that boosts the bass and excites the highs (i.e not flat). What model headphones are they?

^ This. Closed back headphones in general tend to exaggerate low end in a way that can be flattering, but not accurate.

Mix worthy headphones tend to be very pricey. But I guess preferences vary. I can only mix on speakers.

If you are mixing in a DAW I suggest making an EQ curve you can load on the LR bus to treat your cans. I just try to get as close a response to my monitors I can with EQ, works in cans cause you aren't fighting room modes and other horseshit. Not perfect, but can help. I also generally narrow my Pan width to like 70-80% when mixing in headphones.

I would look into phase issues. A Correlation Meter is very helpful for mixing for me. a lot of things that may sound great on headphones will not work with speakers. switching to mono while mixing is also a good help to hear if you have phase issues.

There are so many pedals out there, but I am in the market for something that's a delay that when you hold on the pedal causes the circuit to freak out and causes noise & screeches.

Is there anything like that you'd recommend?

Depends how much delay you want, as it's closer to spring-style reverb that can get "out there"/almost delay-ish, but the Mantic Proverb V2 is worth looking into:

Yes, yes that looks promising.

As a whole, the Proverb V2 really does sound stellar. The oscillations can get loud/cacophonous/trippy rather quickly, but the reverb sounds lived-in, pleasing to the ear, and provides a lot of flexibility..

Like something that basically momentarily dimes the feedback knob so the thing gets stuck in a self-perpetuating feedback noise loop till you let up? I've done that on a number of delay pedals i've built. Its quite an easy extra addition.
