In the weeks to come I'm going to be working with a friend on a musical project of his, and he wants to have some live processing involved. I've read up on Granular Synthesis, and I've learned to use some Granular Synthesizing software that allows you to use samples or prerecorded tracks. But my question is, is there a program or a piece of hardware that would allow for this kind of processing to be done in a live setting? Meaning, could I route from the soundboard back to my computer or some other piece of hardware and then fuck with shit to have it sent BACK to the board and out, all in real time?

Max/msp will do this, and much more, but it requires a serious commitment to learn the software throughly.
Audiomulch will also, and it is easier to use. PC ONLY
I am sure there are many other options also, but these two are a good start.
