I'm going to have to go with Japanese. Chef special sushi or sashimi.

3This is a tough one. There is something wonderful about each of these cuisines that sets them apart from the others.
Removing sushi from the picture, I'm going to have to say Korean. I came to Korean food late in life, so it still has surprises, and there are some great Korean BBQ places nearby. The Bulgogi at SanSooGabSan is fantastic. There's a place in the Furniture Mart downtown that serves a mean lunchtime Bibimbop.
Vietnamese is not to be missed or written off either. Tank noodle on Broadway has good Pho and entrees, but it's the Jackfruit smoothie that keeps me coming back. Some of the more "upscale" vietnamese food out there has a French culinary influence that makes for some really unique flavors.

But if you don't remove sushi from the picture, there's no way any of these others could get a single vote. Really good, simple sushi is without peer. Gotta even the playing field a bit here.
