home-made quiches with nice ingredients are a thing made in heaven.

however, the vast majority of quiches in existence are those insipid, slightly slimy affairs purchased from the local supermarket. usually they are also left to sweat gently for a couple of hours beforehand when part of a company buffet.

I recently had an awesome quiche with smoked salmon, cream cheese and dill. So great! I will post the recipe here when I can find it.

It's sadly true that most mass-produced quiche is crap. Marks & Spencers, perhaps unsurprisingly, do a good line of quiches.

Two things:

a) the pastry is super crumbly and a bit of a bitch to work with before it's cooked, which can lead to:-

b) fissures, collapsing shell walls and leakages when you add the custard
