Of course the word "Mexican" in and of itself is not a derogatory term, it's a nationality.
However when you group it into the phrase "Mexican piece of shit" it becomes an offensive racial slur. It implies that Mexicans are pieces of shit. Ask any Mexican person, outside the context of this particular discussion, if they'd consider it a racial slur if somebody called them a "Mexican piece of shit".
I'll give you 2 to 1 odds that at least 4 out of 5 of them will say they'd consider it a slur on their heritage.
I'm sure we could find 5 random Mexican people in your neighborhood to ask. If not, we can certainly find them around my place.
You game?
Yeah, I'm ready. Let's go ask a bunch of Mexican strangers if Mexican piece of shit is derogatory. You don't think that would be out of context? I do.

You added this after my previous post.
I acknowledge that some might consider it offensive, but I don't have to agree with it. All sorts of commentary has been made about how political correctness is hindering how we live. I'd say this is one of those situations. I agree with everything you said in your post that I originally responded to. I just don't think that it applies in this instance. Your point makes it sound as though any time any one mentions nationality, then they're out of line.
I guess I'm trying to say that we need to collectively lighten up a bit. We can't cry bigotry every time you hear a nationality in conversation, or we're never going to get anywhere. I don't care if I'm called a white asshole. I really don't. I'd be more concerned with the 'asshole' part. By constantly tiptoeing, then screaming bloody murder any time a nationality is mentioned in passing as bigotry is only perpetuating the myth. We need to move on.
I've seen the bridges burning in the night.
