I've never bothered to look for these until now, but it looks like you can download quite a few of the original Iron Chef episodes online. Awesome.

I've always liked Ramsay. The more extreme examples of his behavior are always obviously for television effect, while you can see the aforementioned "nice guy" peek out quite often when he's being genuine with someone.

Plus he says fuck a lot.
