It's called Sheetrock just like photocopies are called Xerox copies. It's also called gypsum, gypsum board, wallboard, plasterboard, and lots of other things.

If you consider Wikipedia to be authoritative, the Wikipedia articles for all of the above names redirect to "drywall" which is what I've always heard it called in my predominantly east-coast life.
