I think it depends on whether you're going for a deep-fried, so-called "popper" or a chile relleno. The mention of cream cheese sounds more like poppers though. I like the cream cheese ones a lot, and I think that sometimes this is one of those things where you need to not be too fancy for whiz or velveeta.

Chiles rellenos seem to be done a lot of different ways, and it's not my white ass's place to say whether that's regional variations, family tradition or what. I don't think I've ever had a bad one, though.

Snazzy. I've used Boursin to top a burger along with sauteed wild mushrooms, garlic and shallots. I've also blended it into mashed potatoes with a little cream and pepper.
