If you want the rats you gotta pay the piper!

This could be really easy and compact. The lil Mooer guys may or may not be easy to desolder jacks foot switches from but two would easily fit in a normal sized box.

If you go that route the the off board wiring would be simple enough that one of us here could draw it on a napkin for you. Though I might would add an extra mini toggle to bypass one of the rats just in case you decide you want a more conventional rat box every so often. This is also simple.

The old Deucetone Rat had a few other clipping options that are fun. Also easy enough to add so long ass the original circuit board isn’t a disaster.

Drilling an aluminum box is really easy. If you are careful you can do it with a hand drill.

If there are some cheap rat copies out there that you like (Joyo has a new full featured one called the splinter but it is a bit bigger and I haven’t seen the insides), then rehousing two of them would probably be the simplest, maybe cheapest option.

If you feel comfortable with a diy scratch build (and don’t need mojo parts) it also wouldn’t be all that complicated. A company called Mad Bean makes a tiny Mooer sized rat pcb. It would be hard to fit two of those in a standard sized box (the BB size roughly the same as two Distortion + boxes in one). Time permitting, I might could help you out with such a project.

Work with the natural spread of the fok stereo image. The direct mics can pull things farther to the sides if you desire without ruining anything, but I find 30-40% sounds far enough to either side and shouldn't be drastically different from your stereo mic unless you're placing it further away from the kit.

I did audience perspective for years based on the notion you're presenting the band as if on stage. In recent years I've reversed it mostly because if you do something long enough you'll eventually get bored about your own opinions.
