Scoville units are... I'm not going to say inaccurate... but they rarely indicate exactly how much pain I'm going to be in if I eat something. It is so dependent on what (if anything) you're eating the hot thing with, and of course how much of it you eat.
Yeah scovilles don't tell you much. I have a sauce in the fridge that's rated over a million SU and.. it's hot don't get me wrong, but manageable. A bite out of a Carolina Reaper or whatever would likely be way, way worse. I've eaten a raw jalapeño by itself that just about killed me.
I've sliced up a whole habanero (supposedly 10 to 50 times hotter) into a burrito and was absolutely fine. It was great.

Yeah it's nearly impossible to know beforehand "how bad is this gonna hurt?" I can only say there's a sweet spot for me where like, the heat lingers, but only for like 10 minutes. Extract sauces are supposed to be way worse than just ground up chiles too. I don't believe I've tried any.
