A went through a couple a few weeks ago. There is for me a kind of heavy feeling over them, like wow they really do this all day every day and it looks like a lot of work. But I also find them very harmonious.

Haburu, a cat who sleeps on a piano while his people play

You Suck at Cooking - quasi-serious recipes

Crime Pays But Botany Doesn't - botany punk that goes to places and talks about the plants there, all while maintaining the aura of "extremely Jersey Italian guy who's been inside"

Ken's Death Metal Crypt - some reviews but also just a lot of straight uploads of old death metal cassettes

Knob Feel - WYSIWYG, just tongue in cheek reviews of knobs based on how they feel

This Exists - no longer active, but still a great backlog of medium-length videos about extreme niche internet phenomena

Really love the NHK documentaries. I have deep travel lust every time I watch them.

I don't know if I've ever watched one video more than once on youtube, but this one is one of my all-time favorites. RILY Jiro Dreams of Sushi - it's not on that level but you'll get the vibe. [Note some sort of restriction doesn't seem to allow me to post the share link, hopefully the click above works]

At risk of ruining something before I can experience it, this one on the Nakasendo stirred me as well. I felt a lot of melancholy (borderline sadness) while watching like I am currently stuck somewhere I don't belong.
