I vote "Yes". Smoked, then pulled. I put two 8lb. shoulders on the smoker last Friday evening about 11:00 and took 'em out around noon on Saturday. So tasty. Getting up twice in the middle of the night to stoke the thing was worth it...

The pig, he is a prince of the eatable creatures! A gift from the Gods to ease man's toil on this earth...

I am sitting in my comfy chair, snacking on fresh mozarella cheese (made in my local Italian grocery) and fresh capicola.

The spicy kind.

This, my friends, is probably one of the things they serve in paradise.

I think a little bit about pork sometimes. I haven't eaten meat since Christmas dinner 1989 when I was 17 years old although I no longer class myself as vegetarian since I've eaten seafood (something I relish) for the last decade or so. There's a whole 'nother thread about eating meat so I'll not go into that too much, suffice to say it's mostly a habit I've rusted into although I'm glad I wasn't eating meat through my poverty years when appalling farming methods at the mass-produced end of the market in this country went unquestioned.

I'm not in the least bit squeamish about meat, in fact I'm slightly fascinated and will happily prepare and cook it for others. I really used to love roast pork, especially cold the next day served with a thick slice of bread and some tracklement. I know this position will appear slightly masochistic but I think I'm just waiting for an excuse (and before my next birthday with a zero at the end I surely will), when I do it will almost certainly be something pork-related that tempts me. Although I'm not so fussed about bacon I can all to easily imagine good salami/capicola or prosciutto leading me astray.

I like the porcine meats, but I'm afraid to cook them myself, because I'm afraid of trichinosis. I don't cook chicken either.
