Currently, I gotta go with "Wichita Lineman" from one of those Def Jam albums. I think John Frusciante played guitar.

"Get Rhythm" is my favorite Johnny Cash song, followed closely by "Big River." I second the kudos for "One Piece at a Time."

As far as lesser-known songs from the Sun Years go, I recommend "Country Boy" and "Sugartime."

If you're looking for little-known gems, though, check out these lost 70's classics:

--"Saturday Night in Hickman County," "Tony," and "Allegheny" (all from Johnny Cash & His Woman, my favorite Johnny Cash album)
--"Cocaine Carolina" (from John R. Cash, written by David Allan Coe and covered by Royal Trux)
--"Crystal Chandeliers and Burgundy" (from The Junkie and the Juice-Head Minus Me)

Cash also covered a great story-song called "Mobile Bay, Magnolia Blossoms." I don't know what record it's from; my dad discovered it on some cheap truck stop cassette comp.
