With a fish taco, simplicity is key. For fried I go cheese and sour cream. That's it.
Grilled load me up with salsa and lettuce as well.
De fucking licious. San Diego, there's trucks all over that'll stop and sell you the best fucking fish taco you have ever had for like 50 cents.

Sour Cream? Barfff. Might as well remove the fish too. All you need is some salsa.
They're great. Last time I had any though was in Akumal, sitting at a beachfront bar with mucho cerveza. Dang, so good.

There's a joint up the street from us called Bonita. Going there for extra-spicy fish tacos and bloody marys on a Saturday morning is just about my favorite gustatory treats.
They have three salsas you can add to your tacos on your own, plus a creamy, spicy sauce that comes already on the taco. They keep it simple and the only other thing in the taco besides the fish are some mixed greens. Toe-curling good.

Love them. With chopped cabbage and queso blanco. Maybe a chipotle cream sauce. Maybe the fish is blackened. All wonderful.
