I don't think I've ever heard it called a "toasted cheese," but indeed, grilled cheese w/sharp cheddar dunked in tomato soup(100% milk) is a gift from the gods.

I've been digging the fresh mozzarella as of late. One way to enjoy...Get the little balls of fresh mozz, place on some slices of roma tomato, place fresh juilianed basil on top of that, wrap in slices of prosciutto, drizzle some vinaigrette on top. So good!

my favorite would be, without question, Borden brand sliced individually wrapped American cheese-food product. i am also a big fan of the mootsarella. i don't like most cheeses so much, although cheddar ain't too bad, and i really wish lasagna didn't typically have so much ricotta in it. a *little* ricotta in the lasagna, hey, not bad. but too much = very bad.

I love all cheese great and small, strong or mild, cow, goat, sheep, water buffalo, mmm, mmm! I do prefer the raw milk cheeses, I'm not sure why we're still killing ours here in America.

Ricotta Salata, Bleu, Fontina, Maiorchino, La Roche, Camembert, Mozzarella di Bufala, Grana, Chevre, Brie, Edam, Queso Blanco con Frutas.

Don't ever wrap your cheese in cling wrap after you bring it home, poisonous compounds will leech into it. Instead use wax paper, it let's it breathe and become more flavorful over time.
