Diet: Gluten-free Gluten-free diet

My wife has her own vegan restaurant/bakery. A lot of the people asking for gluten free goods see it as either A) for losing weight or B) the buzz word of what to avoid. All they are doing is asking for more processed food items. For those with a true sensitivity to it = not crapEvery other fucker = crap

Is this just a fad diet? It seems like a whole lot of people out there suddenly have a gluten intolerance or are evangelizing the benefits of going gluten-free. I'd be interested to hear the pros & cons, skeptics or supporters of this trend. Thanks!

(shameless self-promotion, you Portlanders can get it easy)Aside from the true celiacs, most people's indigestion is coming from the sugars and hyperprocessed garbage, that goes into MOST commercially available bread.
