I have the app and do find at least the metrics and planned workouts to be useful (as well as racing people on the leader board), otherwise I would just get on the bike, move my legs for 30 minutes and get a false sense of accomplishment. And while what you say about the instructors is largely true (which I can put aside for a good enough workout) there are some rides with decent playlists and non-perky or drill sergeant-y instructors (Christine's "New Wave" rides, which are really post-punk/goth rides. The "punk rock" rides are ok but you will get some Blink 182 alongside your Buzzcocks..). Maybe take a Tabata or HIIT ride just to get a sense of how the intervals are paced out so you can apply them to any ride you want.

I thought I would like the scenic rides more, but seeing as the camera just goes regardless what your legs do there's really not much separating that from watching nature shows while you workout.

This is good advice and I think I’ll just mix it up with instructors sometimes and scenic other times. I did notice that Peloton has upped the game with interactive scenic that scrolls in proportion to your pace, and they now have scenic rides with trainers, so you can do the interval stuff while riding in Savannah GA for example.

I guess there's some thing called Zwift that has more realistic interactive stuff, like smart resistance and more of a focus on realistic riding? I dunno anything about that world. Seems cool, but not really worth the extra coin, Peloton is expensive enough!

I was just about to post that while this is not a bike, I've gotten a lot of mileage out of the Sunny twist stepper with resistance bands. (Though more often than not, I'll use weights instead of the bands.) That seems to go for $75 or less, so if you like the bike but want to switch things up, it might be worth getting. (It also barely takes up any space, which is an advantage.)

Has anyone used these? Are they at all stable enough to mimic a spin class?
My wife was using this when she hurt her ankle. Dunno what exactly spin classes contain as far as rigor (feels like you are asking if the thing can take a beating of sorts), but this little guy is adjustable. Works really well, easy to set up. I think in spin classes people yell at you and tell you try harder. It doesn't do that.
