+1 to this one. A great Uncle Tupelo song (quiet/loud/quiet, about alcohol and small town life, though not particularly about their small town).
This would probably be my pick for them as well. I'm not sure if the entire song is about Columbia, MO - but it's 2:40 or 3:00 from Belleville (depending on which way you go), and houses the classic Liquor, Guns and Ammo store. I'm originally from that area so this song always struck a chord with me. It also doesn't hurt that I used to see them play a lot back then. Anyway, great choice!

Politely...

You are selling this band way the hell short.
I get that. But honestly, for me anyway, this song is my go to. It's the first song of their I ever heard, and it just encapsulates them. I dug deep, too. Albums, singles, bootlegs, you name it. I know there's a width and breadth that is probably not at all represented by a seemingly simple soft/loud/soft ballad, but if I had to sell them to a noob, I'd play Whiskey Bottle.

To me?

There's just artist/bands where "In one song..." just doesn't really work.

Take someone like PJ Harvey. If I picked a song from Rid Of Me, I'd be leaving so much of that artist's accomplishments out in the cold.

There's just times where it is almost impossible to any real justice in just a single tune.
