Gingerbread cookies vary wildly in flavor profile, not unlike chocolate chip. Soft, chewy, gingery (with actual ginger in them and on them), they can be phenomenal on occasion. All cookies should be chewy.

It's the soft spiced ginger/honey cookie that is the best. Apparently this is Cerberus's favorite snack and the ancient Greeks would send you off with one just to be safe.

shortbread is almost foolproof, just don't pack it in the pan. Keep it loose so it doesn't wind up too dense. Gingerbread is way easier to fuck up. Use real ginger and be very sparing with the molasses.

I love a gingerbread cookie but Momma can't have molasses, so it's nothing but shortbread in our house (sigh).

Fucking love gingerbread cookies. It's good they are seasonal or I would kill myself on them. I come pretty close every December as it is.

Shortbread is boring as fuck unless it is covered in something like a Twix. Gingerbread rules. One of my absolute favorite cookies. Ginger snaps too.

While I love a good gooey cookie right out of the oven, I personally prefer a crisper cookie when it is cold. Chocolate chip is a great example. Love 'em warm and soft, but prefer a thinner crisper cookie otherwise. Absolutely hate that soft bake nonsense. Worst cookie ever? A soft sugar cookie. Tastes plastic or something.
