If I were frying chicken in a rendered animal fat, tallow would be my third choice after lard and duck fat, but I'll bet it's divine.
Best Fried chix I've ever had was a joint in Boulder back in the summer of 2019. I'll look it up. Might have been Denver, we hit a couple of spots on that trip.

I've been trying to get down to Hyde Park to visit Virtue, and Chef Erick William's other restaurant, Daisy's Po-Boy & Tavern for some yummy soul food. Haven't had yummy soul food for supper in a minute. Also looking forward to tasting his mac & cheese creations at Top This Mac & Cheese - delivery only on the near south side tho

Had a delicious flight of grits at Phlavz in University Village Marketplace on Maxwell St not too long ago
lobster, shrimp, and jerk chicken
The food is excellent, but I feel like an old man when I say that the music and atmosphere was too loud for an afternoon meal. I mean, it was LOUD. The space is tiny, and there was a bit of a wait to get seated. And the music was LOUD.

Just had this tonight. (We live a few blocks north of it.) Very, very good. I had the Mac with blackened shrimp. The shrimp was pretty salty, but there weren’t enough of them to overdo it.
The serving didn’t seem that big, but 3/4th of it was plenty.
Would eat again.

What does anyone think of Chicago's Pizza? I know it's not the best in terms of a hip factor or uniqueness, but I dig their cheese to sauce ratio. Don't much cotton to the other menu items, but I've had their Italian sausage pies twice in as many weeks and they hit the spot.
Also looking for a place with spectacular fries.

Gaijin - Great spot, good sized portions, relatively affordable given the neighborhood/sitch. Sit at the counter.
Avec - Still great, can't get enough.
Red Hot Ranch - You know you need it.
