90% of "black" olives on the market are green olives with added colouring
i have no sources that can confirm this

Yes.
I'm against pitted olives on principle, if only for the reason I like the feel of scraping the flesh from stone on my teeth. It's uniquely satisfying.

Both green and black olives were a staple side when I was growing up. I'd put the black ones on the ends of my fingers and pretend to be a monster or alien.
