two andouille sausages or red pepper chicken sausages, sliced. a bunch of diced fresh asparagus. a bunch of red & yellow & green peppers (the frozen bags from trader joe's are perfect for this). saute these guys in a pan with some olive oil - add a ton of black pepper and a few dashes of sriracha. when the sausage has browned, add a couple of eggs, a little bit of butter, and some black hawaiian sea salt.

Add some mushrooms and you've got yourself what consititutes a standard omelette round my way. This is supertasty whatever the time of day.

(Indian) Omelettes a la Mamma Rimbaud (serves two):

-Four large eggs
-Medium-sized onion finely chopped
-One medium sized tomato chopped
-Half a fresh green chilli (or a quarter teaspoon of crushed chilli)
-Quarter teaspoon of tumeric
-A bunch of finely copped coriander
-Couple of tablespoons of milk
-OPTIONAL: a quarter teaspoon of finely chopped fresh garlic and ginger

Beat off the eggs and add in all the other ingredients. Mix a little more. Salt and pepper to taste. Heat a little oil in a frying pan and pour in the mixture. Cook that off on both sides (I flip it, but I know some people like to stick the pan under the hop to finish off the top).

Serve it rolled in a paratha - believe me, this makes the dish. You can buy these pre-made (boo!) or you can make them yourself. They take no time at all, and if you've ever made a chapati you're already most of the way there.

THIS is pretty faithful to the way my mum makes them.
