they have less mercury. (apparently because they reach full size quickly, are small, and don't eat other fish. in any case, you'd probably have to eat a shitload of them to get enough mercury to matter.

Coated in flour and fried, or from the tin, I eat them weekly. Go well with artichoke hearts on pizza or broken-up as a sauce with pasta.

Tin-wise, the Canadian ones are much more substantial. And they've just started selling fresh Cornish sardines at my supermarket, so I always buy extra packs and freeze them. It think it's been reintroduced to encourage people to eat a wider range of more sustainable, and local fish.

The cat always gets one, too.
