Usually scrambled, if I'm having them, with black beans, hot sauce, and a sprinkling of Midyett Premiem Rub.

Around this time last year, when I was watching the dog for several weeks (a lot more work than you'd think), if I didn't have something better to serve him for dinner, I'd fix him some:

My preferred egg preparations:

- British-style scrambled, with butter and cream and a bit of chopped tarragon, over good toast.

- Sunny side up: in a potato hash with pickled mustard seeds and light cream, and smoked whitefish or sable.

- Soft boiled, ramen style

- Hard boiled with a bit of seasoning salt, when going backpacking - the perfect accompaniment to freeze-dried biscuits and gravy.

Same here. Omelettes are often disappointing. Denver omelettes can fuck right off. If I want an omelette I'll make a motherfucking quiche.

That said, an omelette with just cheese and bacon, wrapped in a good flour tortilla, can hit the spot. Keep it simple, stupid.

For most of my life, I was a scrambled eggs man. I still like them, but more recently have leaned towards over easy. Probably because the local diner down the street from my house serves my favorite breakfast, chili and eggs. Been going there for over 15 years and would always order the dish with the eggs scrambled, but decided to try to with over easy a couple years ago and never looked back. I can make good scrambled eggs at home, but have only tried to do over easy a few times. Hard to get it just right so far.
The scrambled eggs FM Dave N mentioned us having in Zagreb were indeed the best, most flavorful eggs I've ever had in my life. We were staying at a nice hotel and they just had them out with their breakfast buffet. Couldn't believe how good they were.
