While I love a good gooey cookie right out of the oven, I personally prefer a crisper cookie when it is cold. Chocolate chip is a great example. Love 'em warm and soft, but prefer a thinner crisper cookie otherwise. Absolutely hate that soft bake nonsense. Worst cookie ever? A soft sugar cookie. Tastes plastic or something.
I like a good sugar cookie. They are out there.
Early in the pandemic I was baking a lot (apparently so was everyone else) and there was a run on vanilla extract. As my job is selling booze I have a lot of Italian liqueurs in the house. I decided to use nocino (walnut liqueur) in place of vanilla, as the abv is similar (43%). Fuckinghell did that make the best sugar cookie. After that I messed around with a bunch of liqueurs: different amari, genepy, fennel liqueur (in olive oil cookies), orange liqueur (in chocolate chip). Really great to have a sweet sugar cookie finish with a little bitterness.

Oh, I'm not saying there aren't good sugar cookies. I'm just saying the classic sugar cookie has been replaced with a pillowy mess in the last 20 years. You know the type, this horrorshow:

My last post about the chewy vs crunchy cookie debate. Ever hear the idiom "that's how the cookie crumbles"? Cookies are supposed to crumble!
Having said that, my gf works in a global job and we see a lot of English biscuits carried over and given to us as gifts. Those biscuits that are as hard as biscotti can fuck off (biscotti is good for Vin Santo only, maaaaaybe coffee. But I'm not a coffee dipper). The rest are rather good. ESPECIALLY, are you ready for it? The ginger ones.

Yes, those are awful. A good sugar cookie is basically a snickerdoodle without the cinnamon.

The ANZAC biscuit is superior however when made correctly.
Non Antipodean frenz should google and bake.

There was a kid outside Bondi markets on Saturdays who used to sell kick arse ANZAC biscuits. Might be there still for all I know, but damn, great biscuits!

Soldiers on the front lines in WW1 invented them with what they could get their hands on, so shouldn't be too difficult when you're not getting shot at?
