I like Robie Fulks calling himself out for a solo in this performance. He really tears it up before handing it back to himself.

First one I thought of, too.
I also like Beck's "That was a good drum break" in Two Turntables and a Microphone, and The Who chanting, "Cello, cello, cello, cello, cello, cello, cello!" in A Quick One. Neither are exactly this, but not far off.
