The b-stock idea sounds like a good idea to me; the one I've had is b-stock I probably got from Full Compass, more than a decade ago now. I didn't know there's a factory up near Alto; that's pretty cool.
I feel like talking you into a b-stock m160 is a good compromise that's practically talking you out of buying a full-price new one.

Alto music in Middletown, New York has an endless supply of used beyerdynamics. They use stock photographs, and the same "used" mics have been continually listed for eight years. The minute they sell one, it gets immediately re-listed. I suspect they have a connection with beyerdynamic in Farmington New York to sell b-stock or returns or blemished mics or something like that. I've bought several from them and they seemed brand new when they arrived. Maybe not, but anyway, they constantly list "used" beyerdynamics for cheap and will even send you a discounted offer sometimes if you are watching them on Reverb. Plus you have 30 days to return it.

I'm in Chicago for the Unwound show tonight, and almost bought an open box one at CME yesterday... it was a little pricier than the b-stock ebay ones and they oddly wouldn't come down on price (usually cme don't give a fuck?) so I passed on it. Asked Heith at RNR too and he didn't have anything, though there is a neotek series one just sitting out on the floor there right now. They've gone fully kookoo for recording equipment.

I'm definitely going to get one, but I may just wait for a used one to turn up back in canada or plan ahead and get one of the reasonably priced b-stock ebay ones whenever the exchange is slightly less heinous.

Sometimes I think I really want a 12 string acoustic, even if I suspect that sound gets old pretty quick and I don't want an $800+ pain in the ass to tune/restring guitar that gets used on 2 songs. But then I listen to certain Basho recordings and the lust starts up again. Help?

12 strings are a pain in the ass and always the first thing to go when people start selling off gear. I played w/ a dude who absolutely adored his and man he fucked with tuning CONSTANTLY. They're also more expensive than a regular guitar for obvious reasons and would imagine getting them set up is exponentially more difficult, ie costly.

obviously in 2023, there are pedals that do simulations...but honestly in the demos I've heard, they all sound like glorified chorus pedals to me. I can hear that they're only doing octaves on the low notes, unison on the high, but still doesn't sound like 12 string, and obviously doesn't have the options to have fun w/ the various tunings of the extra strings - however for a stage deal, it might be close enough.

All that being said, if there's anyone I'd want to hear really go to town on a 12-string, it'd be you. Sorry, I know that's not a TMOOI but...

If you can't be talked out, buy used, sell for same price, out nothing (except maybe shipping cost).

Do it, but get a dedicated headstock tuner

Definitely. Also: I feel like with a 12 string there's so much character and dissonance in the strings that'd I'd be less worried about tone woods and whatnot, and a mid-level (used) Yamaha or Taylor would probably suffice. I might just have to go to Guitar Mart and play one for an hour to see how much I still like it (and how much my hands hurt).

When you try them, try a bunch - I’m not a huge fan of how Taylor sets the stock string heights on our 12 strings. But I prefer almost everything else we do on them vs other brands - they stay in tune well.

Aren’t 12 string acoustics really prone to bridge lifting and other structural woes due to the increased tension?

Modern ones (beyond the $300 crap) seem to be reinforced well (not gonna bother with quirky vintage models for this), plus I tune down.

I bought an old 12 string electric last year and it mostly collects dust. When I do want a 12 string sound on a recording, I'm actually more likely to double track the part with something that is nashville strung so I have more control over how much each set of strings comes through (the 12 string itself. ends up sounding muddy, although I feel this is mostly present in the electric realm.)
