I thought I'd throw this out since we're talking about Hot Dogs.
There's a wonderful place called Pete's in Birmingham AL. It's been there over 70 years and Pete still works there and owns the place. There's just Plain or Special. Special is basically Coney or Spanish sauce and minced onions.

And about any place in W.Va. you stop into will serve up their standard which always includes slaw. Wonderful.


And O'Betty's in Athens Ohio is interesting. All the dogs are named after Burlesque stars. They have an interesting Hot Dog museum too.

Still miss the Maxwell Street Polish however, I know it's not a hot dog, but still it's handheld encased meat. If I'm in a real hurry and can't get over to Hot Doug's I'll swing by Super D, Huey's or Byron's even though I know I'll pay for those later.

So many Chicago style dogs have graced my table through the years. Back in the '80's I knew all the best joints in the western suburbs. Many of 'em are gone, sadly. Is Parky's still open? Anyone know? I digress...

I've always assumed the neon green was to distinguish the relish from the pickle and the sport peppers, which are generally similar in color, and too similar to traditionally colored relish. Part of the majesty, after all, is the appearance of a well made Chicago Style. We eat with our eyes in so many ways. A dog covered with some nondescript brown muck (no matter how toothsome it may be) is not the same visually...

...which I adore on everything from sausage to pasta to salads, and which California apparently has no love for (not even in the Italian deli/markets).

I love my hot dogs chicago style. Chili dogs are barely acceptable to me, but I have never had one with onions and mustard, so I imagine that I've been missing out.

There's a guy who sits on Green Street here every night from like 10 til 3am selling Chicago style dogs from a little kiosk thing called "Mustard's Last Stand". Fucking awesome, bright green relish and all. I think I'll have one tonight.
