I'd also prefer not to support the Krafts/Nestles/ConAgras etc that did their part accelerating end times as well.

There are a few things I feel like I could eat an infinite amount of without getting full:
Spam musubi.
Pocky.
Chocolate Riesen chews.
Sour Gummy Worms.
Those spicy Japanese rice crackers wrapped in seaweed
Most sushi (though I once got myself into trouble at an all you can eat)

If you have a kid or kids (or not) and you happen to find yourself with leftover Annie's mac & Cheese sitting around, a spoonful of chili crisp will take it from bland baby food to a delicious and textured umami bomb. I must credit Samin Nosrat for this pandemic survival tip. For me the flavor combo still conjures Zoom Wines and 7pm pot-banging at the windows.

Econo -
  • Big hunks of broccoli, specifically the stalks
  • One bell pepper
  • Smashed garlic
Chop the brocc and the bell pepper so they're roughly the same length, with the pepper like a third the thickness of the broc. Get the smashed garlic (can be cubes or "jarlic" if that's all you've got) in there and toss it all in olive oil and coat with a seasoning of choice (I like the Midyett Rub for this). Pop in the oven at 425/450 for 20 or so minutes. Gets nice and crispy and gives you some always needed fresh veg bite without getting "mushy" or whatever.

Excepting the rub, that's definitely less than $5 at the grocery store and is something that you can stretch as a side or whatever throughout the week.

My veggie scrap meal of choice is to start by roasting them like several have mentioned already (an air fryer works too), using some homemade bone broth made from the cheaper bone-in meat you buy to save money (right??), add both to a good blender along with any thickener you may have around (pesto, soft cheese, tahini sauce, etc) and puree the hell out of it. It's nice starting off meals with a nutrient packed soup, which tends to make you not over eat the junkier and/or more expensive parts.
