I like the solo in Baker Street.

The solo in "Wonderful Tonight" by Clapton is the best. It's the only reason I ever go to wedding receptions.

My favorite has always been Frank Zappa's solo on "Call Any Vegetable/Invocation and Ritual Dance of the Young Pumpkin" off Absolutely Free.

Say what you will about FZ's overall career wankery, but this track is truely a gem.

Also, Django Rheinhardt's solo on "Night and Day" from the 1953 Blue Star sessions.
