I had Maurice's BBQ on touer last month. It was the first time I had ever had mustard-based sauce. The first bite was a bit of a turn-off, but by the time I made it to the last I was sold. Been craving it ever since.
I think a good vinegar-based sauce is the best way. There's a place in north Alabama that serves NC-style BBQ, the kind with a sauce that's just vinegar and drippings as far as I can tell, and it is my all-time favorite.
