I will also say that it is completely fair to be an artist that prefers to draw with charcoal rather than on an iPad. Certain tools help ignite the spark of creativity or simplify the act of expression and that relationship is different for everyone.

I'd agree, and my initial process can be pretty primitive. It's often the next step of 'how to pull this off in a setlist' or 'not annoy others for 20 minutes trying to twiddle-recreate exact settings' where the tools are really worth learning.

As in switching to a new pedal bank on the spot? That's probably going beyond its reasonable capabilities, the analog equivalent would be rearranging pedals or swapping out a whole board on the spot. Also a good case to move up a size if that's something you need to do a lot (the 3 switches on the small model does seem a bit limiting).
I know the big Helix can do it by using the second core to handle the blending and that would definitely be the logical next move but it is a bit more than I am willing to spend. Who knows, I might end up going back to the HX stomp and using it with one of those small Morningstar MIDI controllers.
I just set up a Helix LT yesterday for some of our sales people for a Fretboard Journal event to let people play through different guitars we'll have on hand.
Part of it was Taylor has a pretty little "Full range" acoustic amp coming out at some point and they wanted to showcase how good a modeler sounds through it.
So the three guitars I had to set up was this weird electric thing, weird semi hollowbody thing with magnetic/piezo combo, and an acoustic guitar with onboard electronics. Also they told me last minute and had to fly out, so I needed it done in a morning. These guitars could not be any different from each other.
We started with a telecaster to have a 'base line' and it just sounded good through every stock patch, figured it wouldn't be a problem then. Plugged in the semi hollowbody and everything sounded weird, bad or problematic (feedback ,etc.) the chance of me getting it done on time dropped dramatically.
...It took me a couple hours but I set up 2 patches for acoustic guitar (light ambience, big room/modern country) , and 3 for each each electric (clean/low, medium, high gain) - got it all about the same volume, but with different feel to each patch, and all of it sounding good. Actually, through that full range amplifier it sounded REALLY good. With some other modelers there's no way I could make the 'user experience' so functional given the wide variety of inputs. Super, super happy!
I'm trying to set up my routing so that I have an output that is my whole chain (pedals + amp) and another output that is just pedals, splitting off before the amp. The idea is that I could easily plug into an amp and have all the pedal settings intact.
Is this possible? Ideally the Left output would be the whole chain, and the Right output would be everything but the amp. Can you have a B path that's empty? I couldn't figure out how to do it in HX Edit or on my HX Stomp XL.

If the amp model is last, then this should be fairly straightforward.
The easiest way is to use a send bock right before the amp. You can have the full signal pass through the send block to the amp, but also have the send out assigned to the effect loop send. Then the effects loop send can go to the amp and the main L/R outs can be used direct.
You could also do a split to a B path and then pan the left and right. You are correct though, a B path can't be empty. Generally I put a gain block in a B path and deactivate it when I need an empty path.
I understand that both of these solutions eat up an effects block. I can't think of any way to do it without using an additional block. I'll post a follow up if I think of anything.

The inputs are different. The guitar in has a much lower noise floor than the effects returns.
