Those are tostones, and in most Puerto Rican neighborhoods you can buy a cool metal press to mush them perfectly after the first fry.

I think the sweet fried plantains require much more ripe fruit than savory ones to get nice and sticky.

You could make breakfast burritos, stuffed with:
  • diced, fried potatoes (I like to add a couple minced cloves of garlic and about a 1/2 tsp of cumin seeds to the potatoes while frying)
  • scrambled eggs with diced jalapeno and onion
  • refried beans
  • diced tomato
  • cilantro greens
  • corn (de-cobbed)

On Saturday morning, we wanted a change of pace for breakfast so we made some Spaghetti alla carbonara. No corn in this recipe, but its base ingredients are breakfast foods. It only takes about 10-15 minutes to prepare, and it's delicious.

  • Spaghetti or linguine for two servings
  • 1 tbsp olive oil (for spaghetti boiling)
  • 6 strips of bacon, chopped into 1/2" pieces
  • 2 - 3 large cloves garlic, minced
  • 1/2 cup onions, diced
  • 1 tsp oregano
  • 1 tsp basil
  • 1/2 tsp black pepper
  • 3 eggs
  • 2/3 cup white wine (optional)
  • 1/2 cup grated Parmesan or Romano cheese
  • salt

In a medium pot, boil water and add a tablespoon of olive oil and a pinch of salt for the spaghetti. Follow package directions for cooking.

Fry the bacon in a large skillet on med-high.

While noodles and bacon are cooking, beat the eggs in a bowl and mix in the wine.

As the bacon starts to get a little crispy, add pepper and onions. When the onions start to turn translucent, add the garlic, oregano and basil. Turn heat to low, and stir occasionally so the garlic doesn't burn.

When the spaghetti is done, drain it and return it to its pot. Set over very low heat. While the noodles are still hot, stir in the bacon mixture, including the drippings. Gradually stir in the egg mixture and grated cheese. Toss well and serve immediately.

Serves 2.

Fried Ostrich eggs, sunny side up will be a refreshing change. They contain good amounts of calcium, selenium, sodium, potassium (52 times more than your banana) & zinc & contain high levels of essential minerals. They are also great sources of vitamin F, C, K.

Boiled ostrich egg tastes great too. To ensure that the egg is cooked properly (to kill bacteria), remove the egg from the vessel every 5 minutes & start spinning it until you get a smooth, top like motion. Then, you know it's done & ready for consumption.

If peeled properly, the shell makes for a great helmet. Nothing goes to waste.

Haggis - 1/4lb of
Black Pudding - 2 slices of
Bacon - 4 rashers of
Potato Scones - 2 of
Fried Eggs - 2 of
Lorne Sausage - 2 of
Beans - 1/2 tin of

Fry the black pudding, lorne sausage and bacon together. Set aside in a warm place when done. Fry the potato scones in the leftover fat until golden. Set aside in a warm place. Heat up the haggis in a microwave. Heat up the beans in a microwave. Fry the eggs whilst that shit's heating up.

Fuck it all onto a plate and eat the fucker.
