Bach's Cello Suites. Listen all of them in their entirety. The 6th in D major in particular has one of the most uplifting cadences of any music.
Also, "Sleepers, Wake". Bach again. Find a decent recording of it peformed by an organist. It rips. It's so simple yet so sublime.
Just listen to Bach, period. Passionate yet rational music...who'd 'av' thunk it?
