Give me some new breakfast ideas

Made giant breakfast burritos today. We have a vegetarian staying with us so I made one set with soy chorizo, spanish rice, beans, spicey guacamole, tomatoes, lettuce, goodfellas style finely sliced onions, black bean salsa, some kind of weird bolivian hot pepper I found at Stanley's, sour cream, scrambled eggs, chiwawa, queso and smoked cheddar. Served with sliced limes on the side.
The other set were the same but I replaced the chorizo with chicken I marinated in a kind of spicey southwest sauce I came up with and simmered in a fry pan with peach salsa for a few minutes.

Turned out pretty darn good.

Just make sure that they are plenty ripe (with a few black spots on them) and fry them until they are really crisp. You can heat the chipotle sauce up or serve it at room temp.


Platanos are ripe when they are completely black.

When making the sweet kind (platano maduro) this is a must.

When making tostones (like home fries) this is a matter of preference...as in how much sweet overtones you like with your salty, garlic laden fried platanos.

Caveat: tostones have been known to stay with you for HOURS. I guess like any garlic-olive oil goodness.

I remember reading a review of some documentary about some eccentric New York cafe owner..

Anyways- the review mentioned Macaroni and Cheese pancakes. That actually sounds good. Then I figured you might try some other kinda starchy, pre-cooked things in pancakes, maybe like beans and rice with corn, or something.

Maybe top it with salsa instead of syrup.

Could work. I guess.
