I didn't look very hard to see if these were mentioned, but...
Tar and Jawbox did a split 7" where they covered each other and it was real, real neat.
Hammerhead covered "Something I Learned Today" on the Du Huskers tribute/comp. I thought that was very special.
Minor Threat covering Steppin' Stone is a thing of beauty
And that album where Killdozer covered Steve Miller and some other stuff. That was swell.

Stranglers- Walk on By
DKs- Viva las Vegas
Laibach- In the Army Now
+ War
Monks of Doom- What Does a Man Require
Talking Heads- Take Me to the River
Manic Hispanic- Get 'em Immigrated (ok, a parody version, not exactly a cover, so don't take me to court on this one)
Nominee for cover notably LESS memorable than the original:
REM's version of "Crazy" by Pylon

My two cents:
Sonic Youth's cover of "Computer Age" (Neil Young) is most excellent, but my hands down favorite cover is Joan Jett's version of "Roadrunner". Hell, it's one of my favorite songs of all-time.

erm... I think that's (Peter Green's) Fleetwood Mac
I'm usually not a fan, but I really like Primal Scream's take on the 13th Floor Elevators ' Slip Inside This House'.

John Frusicante's take at "Big Takeover" by Bad Brains. The original has a truly great guitarsolo, but still I prefer Frusciante's version.

New Zealand band Shihad do a fantastic version of Boys Keep Swinging -Bowie- , it's dark as hell.
Oh, and everything by Dread Zeppelin. The greatest covers band ever... Led Zep songs sung by an Elvis impersonator and played in the reggae style
