MrsEaster, the pesto fiend around these parts, swears by walnuts. Results are pretty damn fine. The key being to always mix in some pasta water. Have even experienced big success using stuff like parsley or carrot tops instead of straight basil.

Pine nuts are cool but good ones cost quite a bit nowadays. Subpar pine nuts are the worst. They can be by turns bitter, metallic, or just fatty and neutral.
During the early lockdown we were getting most food from the local farmer's market. The celery tops were so insanely huge that I made pesto from those once, no basil at all. It was, as one can imagine, more bitter than basil, but it was really good! Used walnuts for that, too. Lots of parm and pecorino helped mitigate the bitterness.
Try toasted almonds! Add cherry tomatoes to the mortar and you are good to go

Trapanese pesto. Never made it at home. Have only had it in... Trapani. But it's fucking delicious. Right on.

How great is it?! Make sure you pound the shit out of the almonds as the larger shards are very nutty for a pasta

On day-4 of a pot of mulligatawny but last night while feeling peckish and bored with the soup I bought a gang of sushi, rolls, etc., so I'm pairing the soup with the tuna sashimi salad I didn't get to last night.

13 year old made Chicken Paprikas last night, with the proper side, handmade galuska (mini egg dumplings like the German spatzle). Top marks for a first attempt, her dowry just went down, we'll make a proper hausfrau out of her yet.
Not an actual photo of my meal, but a dish worth trying for those who like to cook.

Earlier in the week I bought a sizeable bag of pappardelle. One night I topped it with beef and a different night shrimp. Meant to bloom saffron with the shrimp but forgot. Been going overboard with cream sauce. Maybe tonight I'll go crazy and attempt béchamel
