Sir,
You have skipped the brining process if this is a problem.
Rinse and shred your collards, then soak them in salt water over night. This breaks down the cellulose in the leaves, I think, and makes them easier to digest.
Rinse the collards thoroughly the next morning (and that means two or three times) and get to boiling.
Recipe here.

okay, as far as the Texas pride thing goes, that's drilled into us...we can't help it...some things stick with you forever from childhood...
on the other hand i don't think we're any worse than NY'ers about that sort of thing...they have regional pride and are pretty jackassey from time to time about it just as much as we are...
and there's not a goddamn thing wrong with that you bunch of fucking haters...

interesting point about the overcompensation thing, i never figured it that way...but i suppose there's some truth to it...
and like was stated before, we practically are our own country...it's due to size mainly...we have our own power grid for that very reason among others that aren't coming to mind at the moment...
oh, and whoever said up north we aren't as twangy, bullshit...i'm originally from Fort Worth and we're twangy, just because their twang matches your own doesn't mean it doesn't exist, i was made painfully aware of this while living in NorCal over 7 years...for being such a cosmopolitan place cali folks sure love to point out our twang for some reason...
also, fuck all of this apologizing for us being who we are...

When done correctly, the breakfast biscuit. I also second all of the other foods mentioned here, except for boiled peanuts. I've never really dug those.
There are things about the south I enjoy. I like being close to Athens, where I know I can usually blow rent money on cool albums and catch good shows from time to time. North Carolina is a (mostly) beautiful state, and I'm in love with Eastern Tennessee, where I have a lot of family.
Still, I also have a lifetime of pent-up frustrations* from growing up here: the not-so-nice people I come across on a weekly (if not daily) basis, the endless class prejudice in my big town/small city, the lack of anything really exciting going on most of the time, and the HUMIDITY. I've already decided to move some place with a brutal-as-fuck winter the first chance I get.
* Yes, I know one can find these anywhere. If I have to go through the same old shit somewhere else, I should at least get a change of scenery to go along with it.
