Impedance of guitar pots?

Hi,
I'm about to replace the pick ups in my girlfriend's Tele. I got her a Lindy Fralin for the neck and a Custom Shop Broadcaster for the bridge and while I'm in there I though I'd replace the pots and the jack plug as well.
There are some crappy 500K pots in the guitar at the moment and as far as I remember most Teles have 250K pots.
How does the impedance value of the pots influence the sound of the guitar?
A guy at the local guitar shop told me there was no difference. 250K would be for single coils guitars, 500K and 1000K for Les Pauls.
Something tells me he's talking out of his ass.
