When performing vocals are singers expected not to make undesired sounds (e.g., breath and general gross mouth-related sounds)? I'm surprised I don't hear it much in music I listen to when I hear it all the time in my own recordings.

If you listen to Some Kinds of Love by the Velvet Underground with headphones on, you can hear Lou Reed doing all sorts of breathing and shuffling around.

i think breathing and cophing and generally NATURAL noises on vocals are cool you should listen to jesus lizard that guy (david yow) does it all the time and it F***ING rules...

I think that this is a cumulative thing...A) The singer should work the mic a little B) The engineer should use a signal chain that showcases the artist/performers better side..If youre using a DAW, obviously, you can edit thebejezzus out of anything, when working from tape I would edit pre mix. I usually try to focus on this when I comp tracks, and I think its very important to leave some of that stuff in there for the feel...

I have always enjoyed recordings where you hear both the music and the process of making that music. On some jazz records, you can hear the keys moving on the sax. Sometimes you can hear someone tapping their foot during a quiet acoustic song. I eat that shit up.

It's natural to breathe, so let's hear it. Overediting subtleties like that is a great way to create *perfect*ly boring music.
