I'm obsessed with the first drum fill in Achille's Last Stand, off of Presence. It's right after the first verse. In the midst of this absurd groove, Bonham does what sounds like a press roll around the kit. It's so fast it sounds like rushing water, and we're well into the song when it happens... it's almost subtle, it's so unexpected - and I swear it's technically impossible. The thought of it gives me goosebumps.
There are others, but this is my personal favorite.

Has to be John Stanier from Helmet's monumental fill on "I Know" from Betty. More balls than marble factory...

Having nothing to do with if I like these bands or not, but -
Dave Grohl's fill at the open of "Tourette's" is one of my favorite fills of all time.
Josh Freese's fill in one of the last choruses of a Perfect Circle's "Judith" where the best way i can explain it is, he switches from 6/8 to a double time 4/4
there's millions all slipping my mind.
Oh yeah i second the "Neil" comment above.

Doug Scharin's drum intro to "Cut Your Face" (June of 44) is pretty impressive as well, I might add...too bad he's making jazz music now with HiM

There's a break in Slayer's "Angel Of Death" where the music cuts out, leaving the double bass drum. I forget the drummer's name, but he does this kinda dumb tom fill to get the guitars back in - it never fails to excite me. Duh.

Hum - Stars. Bridging the intro to the verse! A classic.
Don Caballero - Haven't Lived Afro Pop. There's a slew of real gems at the end.
Chavez - Peeled Out Too Late (off Gone Glimmering). When they rehash the intro at about the 2 minute mark... the drums are nice! Good fills!

Mac McNeilly....his part on "Din" (?) where it sounds like he's playing two drumsets at once...in fact all of DOWN is pure stick brilliance come to think of it

I am feeling you re: "Achilles." I am also way partial to the fill in that song where he does a series of triplets, hitting a cymbal for the third note each time, very loud.
