Lots of homemade pizzas.
I did buy a Weber Q2200 last summer so chicken wings and grilled veggies have been in heavy rotation as well.
Food that's been hit with a flame tastes so much better.

What is your cheese preference? You using the nacho or just shredding some cheddar?
I'm not a fan of using shredded cheese, it tends to solidify leaving you with one big nacho.

No pics and I can't cook anyway but around New Year's I did a decent little job with a cassoulet.
Main thing of note is that one grocery store near us started carrying Impossible Burgers and my fiance picked those up for us a few times (she's vegan; I'm not but I eat vegan frequently and like doing so). The fun thing is that a couple months later, Peggy came home one day holding the new thing that grocery store just started carrying: Impossible Burgers. As in the patties. I guess what we'd been buying were the bricks of Impossible ground beef. We had both just thought Impossible made improbably sized burgers that were square like at Wendy's. Didn't question it too hard.
Unfortunately it turns out it's awesome to cook an entire Impossible loaf as a burger. It's way too big and way too expensive so it naturally makes space for itself in the Occasional Treat category.

50/50 shredded Monterey jack and cheddar.
Also, I am a bit deliberate about how I distribute the cheese and the other toppings, so it does not result in one big slag heap.
If you can, prepare and serve your nachos in a cast iron pan and they will stay warm longer..

A metric shit-ton of tacos in a quest to dial in the perfect breakfast taco recipe. Lots of organic hippy ingredients. I’m pretty content with the end results.

A sort of pulled beef/pot roast mashup. Get you a chuck roast, rub Montreal steak seasoning on it, like a lot, 1 tbsp per pound. Toss it in the slow cooker with onion, celery and a little more carrot than you'd think. Drizzle a tablespoon of soy sauce in there. Run that slow cooker on low for 8 hours, then pull the meat apart with two forks. Serve on wide, flat egg noodles.
I had hoped this thread would be named "fancy fancy recipes for FM NewDarkAge to teach cooking", like the student becomes the master.
