I didn't look very hard to see if these were mentioned, but...

Tar and Jawbox did a split 7" where they covered each other and it was real, real neat.

Hammerhead covered "Something I Learned Today" on the Du Huskers tribute/comp. I thought that was very special.

Minor Threat covering Steppin' Stone is a thing of beauty

And that album where Killdozer covered Steve Miller and some other stuff. That was swell.
