To say about someone "oh, he doesn't have a mean bone in his body" is a slang way of saying "this person is super nice" or "this person is incapable of being mean".

So you are setting her up, saying "you are really nice".

But then by asking "would you like one?", you are offering to put a mean bone in her body. See?
