I don't know what exactly means in any specific context. But I can tell you about the slang expressions in general.
"Stop dead in their/my/his/her/our tracks" means something like... you're moving, maybe walking, and you see something that makes you stop, makes you freeze like a statue in place, maybe it's something frightening or dangerous or something like that. It doesn't *have to* be literal like that; it can be metaphoric, too.
Also, as a slang expression, "tracks" can be a reference to shooting drugs with a needle; the marks left on your arm from the injection are called "track marks".
I don't know if any of that has anything to do with the line you guys are talkin about. I barely ever pay attention to lyrics.
