Don't let him ruin this discussion of cheese.
I know that jalapeños and poblanos are often stuffed with various cheeses... cream cheese, cheddar, chihuahua, etc. Any other interesting thoughts on what cheese(s) you could use for this purpose?
I think it depends on whether you're going for a deep-fried, so-called "popper" or a chile relleno. The mention of cream cheese sounds more like poppers though. I like the cream cheese ones a lot, and I think that sometimes this is one of those things where you need to not be too fancy for whiz or velveeta.
Chiles rellenos seem to be done a lot of different ways, and it's not my white ass's place to say whether that's regional variations, family tradition or what. I don't think I've ever had a bad one, though.

I worked very briefly for some dude that used Boursin for this purpose.

While most of the abs in 300 were CGI, I've heard those of Xerxes we're molded from cheese.

Snazzy. I've used Boursin to top a burger along with sauteed wild mushrooms, garlic and shallots. I've also blended it into mashed potatoes with a little cream and pepper.

Hot damn I've never thought of Boursin on a burger before. Going to give it a go with some 80/20 lamb & beef burgers tonite...

I bet Zack Snyder chose some extremely slutty French cheese like Faisselle to heighten the whole fetishized cultural stereotype aspect of Xerxes.
