This thread should evaluate cheeses from here out.
My wife and kids do not like brie. I do, and I think I'll use it on whatever preparation I have for the flank steak that's for dinner.
Colby jack gets a bad rap - it's good, and like all other cheeses, it much better after sitting out of the fridge for a good while.
The pre-shredded cheeses with the potato starch added for anti-caking bullshit, man, that's some lame shit. Let it clump. I'll figure it out eventually.
Gouda - totally hit or miss. Don't buy that shit at your run of the mill grocery store. Shit's like American with 2 colors of yellow added to it. It's a risk.

I’ve been hooked on the smoked provolone at the HEB deli. Made a grilled cheese with it the other day, and it was a slam dunk.

If I had a guilty pleasure cheese it's Cotswold, which is like an orange farmers cheese (I guess it's officially a Double Gloucester) with chives in it. It's fucking delicious and my cheese friend makes fun of me for loving it. I guess it's a joke amongst the "important" cheesemongers, of which he is one. But he likes Hot Cheetos, so fuck him. It's great on burgers.
