For those too lazy to go to the first page, here's cjh's brilliant recipe.

I'm eatin' these right now and, if I may make a change, I highly recommend using 1/4 melted butter in place of the vegetable oil. so nice

When is Flapjack Day, and would I be right in thinking that you folks on the other side of the pond find a great distinction between flapjacks and pancakes?
I'd also like to second Chilly Willy as the Patron Saint of Pancake Day.

Pancakes - made predominently with flour and eaten hot, but not always. Scotch Pancakes (aka Drop Scones) are almost as delicious eaten cold. Almost.
Flapjacks - made predominantly with oats (the FJ's I've had anyway) and eaten cold.

edit: This year I pushed the boat out and aimed high re: pancake/crepe consumption. That's right, double figures. I have so far consumed 11, and the night, she is young!
