My wife loves manchego from her time in Spain. I've come to love it. Nice on a cracker as an hors d'oeuvres.

See, I've always preferred it in a charcuterie - or even just with a sliced apple and a few grapes.

The coffee shop down the street doubles as a Neapolitan style pizza place and one of their creations is an artichoke and manchego pie. It's one of the best things ever.

Yeah, my wife is a big fan of manchego.
I think I'm gonna get a fucked up cheese I don't otherwise normally use for burgers the next time that's on the menu. Something super gnarly and offensive....ideas?

For homemade pizza, we've switched from Mozz to Scarmozza. Definitive upgrade, especially with veggie toppings.

I like to rain shredded cheese on corn chips and throw em in the oven for 12 minutes at 200 degrees. Makes for a decent nacho.

I like the pre-shredded stuff for mac & cheese sauce.
For pizza you need to mix some provolone in your mozz, and a little parmesan or grana padano.

Manchego is a minor deity. I still have a pretty solid thing for a proper country side Stilton. Some water crackers, Stilton and a knife is really all I need. Sadly, I've yet to find a proper cheese to pair with coffee.
As a side, replace some of the butter in a scone mix with chevre.
