some days for breakfast I will have toast with cream cheese or neufchatel with my coffee, and if I'm feeling fancy I will add some goat cheese to that mix. Not sure if that truly counts as pairing but it does not taste bad together.

Yeah, I would think that you'd want something really creamy and bland - inoffensive, almost like adding a bit of cream to your coffee. Cream cheese would work, but goat cheese has that hint of grassy/gameyness to my palate that would interfere with the coffee. There is a cheese that the people up north eat, known specifically as coffee cheese. You can put it right in the cup or have it on the side. It's made from reindeer milk and I think baked in an oven. Maybe it's not pure, but I'd say cream cheese on a pumpernickel bagel goes pretty damn well with coffee.
